125 | g | Butter |
2 | tb | Golden Syrup |
1 | c | Flour |
1 | ts | Baking Powder |
1/2 | ts | Salt |
1 | c | Coconut |
1 | c | Whole-Wheat Malted Breakfast Biscuits, crushed |
LEMON ICING: | ||
5 | tb | Lemon Juice |
2 | c | Icing Sugar |
Melt butter & golden syrup. Sift flour, baking powder & salt into a bowl. Add sugar, coconut & biscuit crumbs. Stir in butter mixture & press into a 27cm by 18cm tin. Bake at 180C (350F) for 20 minutes. Spread with lemon icing. When cold, cut into squares. LEMON ICING: Mix lemon juice & icing sugar to form a spreadable icing. Add water if necessary.
