Title: Christmas Cake Cookies

Yield: 12 Dozen
2 1/2 | c | Flour |
1 | ts | Baking soda |
1 | ts | Salt |
1 | ts | Cinnamon |
1 | c | Butter |
1 1/2 | c | Sugar |
2 | Eggs | |
2 | lb | Dates; pitted, cut in chunks |
1/2 | lb | Candied cherries; quartered |
1/2 | lb | Candied pineapple; thinly slivered |
1/2 | lb | Almonds; blanched, coarsely chopped & toasted golden |
1/2 | lb | Brazil nuts; chopped |
Cream butter. Add sugar gradually and beat until smooth. Blend eggs in thoroughly. Add dry ingredients and all the fruit and nuts. Drop batter from teaspoon onto ungreased cookie sheets and bake at 400ø for 10 minutes. Don't overbake as cookies should be soft in texture. These are delicious little cookies which keep well.
Yields 150 to 170 cookies.
