Title: Debbie's Sweet Potato Pie

1 1/2 | c | Boiled and mashed sweet |
Potatoes | ||
4 | Eggs | |
1/3 | c | Sugar |
2 | tb | Honey |
3/4 | ts | Cinnamon |
1/4 | ts | Nutmeg |
1/8 | ts | Ground ginger |
1 | c | Light cream |
1/8 | ts | Salt |
1 | ts | Vanilla extract |
1 | 9-inch | |
Unbaked pie shell |
Preheat oven to 450. Beat eggs very lightly and add to mashed sweet potatoes. Stir in sugar and beat well. Add honey, cinnamon and nutmeg and mix well. Blend in ginger, cream, salt and vanilla. Pour mixture into unbaked pie shell. Bake 10 minutes and reduce temperature to 350 and bake 30 minutes longer or until a knife inserted near pie's center comes out clean. Cool pie and serve plain or with dollops of whipped cream.
