Title: Easy Fantasy Fudge Frosting

3/4 | c | Real margarine NOT SPREAD |
3 | c | Granulated sugar |
2/3 | c | Evaporated milk |
12 | oz | Semi sweet chocolate chips |
7 | oz | Marshmallow creme |
1 | ts | Vanilla |
Mix margarine, sugar and milk in heavy saucepan; bring to full boil, stirring constantly.
Continue boiling 5 minutes over medium heat or until candy thermometer reaches 234 degrees F (soft ball stage), stirring constantly to prevent scorching. Remove from heat.
Gradually stir in chips until melted. Add marshmallow creme and vanilla; mix well.
Thin icing, if necessary, with one or two tablespoons of hot water or coffee.
Makes enough for 7-by-11-inch 2-layer cake OR 9-inch round 3-layer cake.
