4 | c | Peaches: peeled/sliced/fresh |
1/2 | c | Margarine, softened |
3/4 | c | Sugar |
1 | c | All-purpose flour |
1 | ts | Baking powder |
1/2 | ts | Salt |
1/2 | c | Milk |
1/2 | ts | Vanilla extract |
3/4 | c | Sugar |
1 | ts | Cornstarch |
1 | c | Boiling water |
BEST OF MISSISSIPPI'S OLD & NEW RECIPES--MS OES, WOODVILLE, MS Place peaches in a lightly greased 12 x 8 x 2-inch baking dish. Set aside. Cream margarine; gradually add 3/4 cup sugar, beating well at medium speed of an electric mixer. Combine flour, baking powder and salt; add to creamed mixture, micing well. Stir in milk and vanilla. Pour batter over peaches. Combine remaining 3/4 cup sugar and cornstarch; stir in water. Pour mixture over batter, and bake at 375F. degrees for 45 to 50 minutes. YIELD: 8 servings.
