BETTY CROCKER'S COOKY BOOK
3/4cButter; part shortening OK
1cSugar
2 Eggs
1/2tsExtract, lemon; OR
1tsExtract, vanilla
2 1/2cFlour
1tsBaking powder
1tsSalt

A time-tested family favorite, made with granulated sugar.

Mix butter, sugar, eggs, and extract thoroughly. Stir flour, baking powder, and salt together; blend in. Chill at least 1 hour.

Preheat oven to 400 F (moderately hot). Roll dough 1/8" thick on lightly floured board. Cut with 3" cooky cutter. Place on ungreased baking sheet. Bake 6-8 minutes, until cookies are a delicate golden color.

Do not use self-rising flour in this recipe.
