Title: Fartes De Batata / Sweet Potato Cakes [Ttop]

Yield: 36 Servings
400 | g | Sweet potato, [14oz] cooled and mashed] |
350 | g | Sugar, granulated [12oz] |
1 | tb | Flour |
2 | Eggs | |
30 | g | Butter [1oz], plus, |
2 | tb | Butter, melted and ready for brushing] |
90 | g | Almonds, ground [3oz] |
90 | g | Glace fruit, mixed |
2 | tb | Orange juice |
Mix the sugar with 30g/1oz butter and the eggs. Add the mashed potato, flour, almonds, juice and fruit [previously cut into small pieces]. Beat thoroughly. Then bring to the boil over low heat, until all the moisture disappears, whilst stirring, to prevent sticking. When very thick, take a mixture off the heat and turn it onto a floured board. Shape into 2.5cm/1inch squares and place in greased tins. Brush the tops with melted butter and bake at 190^C/375^F for 10-15 minutes, or until golden brown.
