Title: Fresh Pineapple with Frozen Berry Sauce (Mf)

1 | Ripe pineapple -- peeled | |
Cored and cut into chunks | ||
10 | oz | Frozen raspberries -- |
Thawed | ||
10 | oz | Sliced strawberries -- |
Thawed | ||
Sugar to taste | ||
2 | tb | Orange juice |
Or orange liqueur | ||
Mint leaves for garnish |
Puree the thawed fruit, then pass them through a sieve to remove the raspberries seeds. Stir in sugar to taste if need be with orange juice or liqueur
Set a clump of chopped pineapple in the middle of each dessert plate; drizzle sauce around the pineapple and garnish with mint leaves.
