Title: Fritos De Batata / Fried Sweet Potato [Ttop]

450 | g | Sweet potato, cooked.][1lb] |
150 | ml | Beer, light [1/4 pint.] |
90 | g | Flour |
1 | lg | Egg, beaten |
1 | pn | Salt |
Castor sugar, | ||
Cinnamon, both for sprinkling. | ||
Oil, for frying. |
Boil or bake the potatoes [in their jackets], until tender. Peel and cut into thick slices. Set aside. Prepare a batter with the flour, beer and egg. Beat until foamy. Mix the slices of potato into this batter. Warm up the oil to 182^C/360^F and fry by the spoonful, until golden, turning once. Place in kitchen paper, to absorb excess fat, and sprinkle with a mixture of sugar and cinnamon, to taste.
Makes about 18 sweets.
