Title: Frozen Pistachio Cheese Salad

3 | pk | (3oz.) Cream cheese |
1 1/2 | oz | Blue cheese |
Green food coloring | ||
1/2 | c | Chopped pistachio nuts |
1/2 | ts | Salt |
1 | tb | Lemon juice |
1/4 | c | Light or heavy cream |
Lettuce | ||
Radish roses | ||
Cucumber slices | ||
French dressing |
Mix the cream cheese and the blue cheese with a fork until soft. Tint a delicate green with food coloring. Add the chopped nuts, salt, and lemon juice. Add the cream. Turn into a freezing tray of an automatic refrigerator with temperature control at coldest setting and spread smooth with a spatula to a thickness of about 3/4". Freeze until firm. Cut into small squares and serve on crisp lettuce in the center of individual salad plates with radish roses and cucumber slices around it. Serve with French dressing. Serves 8. An assortment of fruits such as orange or grapefruit segments, slices of cantaloupe, peach, or pineapple with strawberries or raspberries are also delicious as a garnish for this salad.
