Title: Fruit Granola Bars

1/4 | c | Margarine PLUS |
1/2 | ts | Margarine; divided |
3 | tb | Light corn syrup |
1/2 | c | Miniature marshmallows |
1 1/2 | c | Granola |
1/4 | c | Dried apricots; coarse chop |
3 | tb | Currants |
1/4 | c | Sifted powdered sugar |
1 | ts | Unsweetened orange juice |
1/8 | ts | Vanilla |
Combine 1/4 cup margarine, corn syrup and marshmallows in a medium saucepan. Cook over medium heat until melted, stirring constantly. Cook an additional 2 minutes, stirring constantly. Remove from heat, stir in granola, apricots and currants, mixing well.
Spray an 8 inch square pan with nonstick cooking spray. Press granola mixture into pan. Chill 1 hour.
Melt remaining 1/2 teaspoon margarine. Mix with powdered sugar, orange juice and vanilla. Drizzle over cereal mixture. Cover and refrigerate at least 8 hours. Cut into 16 2-inch squares. Store covered in the refrigerator.
Makes 16 servings
