Title: Ginger Loaf

Yield: 1 Loaf
125 | g | Butter (5 oz) |
3/4 | c | Golden Syrup |
1/2 | c | Brown Sugar |
3/4 | c | Milk |
1 | c | Sultanas |
1/4 | c | Crystallised Ginger, chopped |
1 1/2 | ts | Baking Soda |
2 | c | Flour |
2 | ts | Ground Ginger |
Place butter, golden syrup, brown sugar, milk, sultanas & crystallised ginger in a large saucepan. Bring almost to the boil, stirring to melt the butter. Stir in baking soda & allow to cool. Sift flour & ground ginger into saucepan. Mix well. Place in a baking paper-lined 22cm loaf tin. Bake at 180C (350F) for 1 hour or until loaf springs back when lightly touched. Leave in tin for 5 minutes before turning onto cooling rack. Serve sliced with butter, & jam if so desired.
