Title: Gingerbread Dessert Waffles

2 | Eggs -- separated | |
1/2 | c | Sour milk |
1 | c | Molasses |
1/3 | c | Melted butter |
2 | c | All-purpose flour |
1 1/2 | ts | Soda |
1 1/2 | ts | Ground ginger |
1/2 | ts | Ground cinnamon |
1 | ts | Salt |
Easy Lemon Sauce----- | ||
2 | Egg yolks | |
3 | c | Water |
1/2 | c | Sugar -- divided |
3 1/4 | oz | Pkg |
Filling | ||
Fluffy Sauce----- | ||
2 | Egg whites | |
1/4 | c | Sugar |
Lemon pudding and pie |
Separate eggs, putting whites in one bowl and yolks in a large bowl. Beat yolks, add milk, molasses, and melted butter. Beat well Combine dry ingredients and add to egg-milk mixture. Blend well, then fold in stiffly beaten egg whites. Bake in hot waffle iron and serve with Easy Lemon Sauce or Fluffy Sauce. Yield: about 3 or 4 waffles.
Easy Lemon Sauce: Mix slightly beaten egg yolks with 1/4 cup water in saucepan. Add sugar and pudding mix; mix well. Then add remaining water gradually, stirring constantly. Cook and stir over medium heat until mixture comes to a full boil. Cool, stirring occasionally. Yield: 3 1/4 cups sauce.
Fluffy Sauce: Make a meringue of 2 egg whites and 1/4 cup sugar. Slowly fold hot Easy Lemon Sauce, as it is removed from heat, into meringue until all is blended. Yield: about 4 cups of sauce.
