Title: Golden Syrup Dumplings

1 | c | Self-raising flour |
1 | tb | Butter or margarine |
1 | Egg | |
1 | ts | Grated lemon rind |
2 | tb | Milk, or 3 if requd |
SYRUP | ||
1 1/2 | c | Water |
1/2 | c | Sugar |
1 1/2 | tb | Butter or margarine |
1 1/2 | tb | Golden syrup |
2 | ts | Lemon juice |
Preheat oven to 190C (375F). Sift the flour into a bowl and rub through butter with fingertips. Add egg, lemon rind, and sufficient milk to make a soft dough. Stand covered while preparing the syrup.
Place all syrup ingredients into a saucepan. Stir over medium heat until sugar has dissolved. Bring to boil and gently pour into a casserole dish. Carefully drop tablespoons of prepared dough into the syrup and bake in the oven for 20 to 25 minutes. Serve hot with custard.
