Title: Chili Sauce > Ball Recipe Book on Home Canning

1gaTomatoes
2cChopped onions
2cChopped red sweet peppers
1 Pod hot pepper
1cSugar
3tbSalt
1tbMustard seed
1tbCelery seed
3tbMixed spices (whole pickling
  Spices)
2 1/2cVinegar (high grade cider or
  White distilled)

Wash & drain vegetables. Scald, core, peel & chop red-ripe tomatoes. Peel onions, remove seeds from peppers; chop & measure. Mix all ingredients except spices & vinegar. Boil 45 minutes. Add spices (tied in bag). Boil until very thick., then add vinegar & boil until thick as wanted. Taste, add more seasonings and sugar if wanted. Pour, boiling hot, into hot Ball Jar; seal at once.

I have used canned Italian tomatoes (with good results) when fresh ones were not available. I generally add some garlic and another hot pepper or two.
