1 Peck of green tomatoes
4 Onions; chopped fine
1cSalt
2qtVinegar
1qtWater
2lbMaple or brown sugar
3ptVinegar
1tbWhite mustard seed
1tbBlack pepper
1tbGinger powder
1tbCloves; powdered
1tbAllspice; ground

Maple sugar is better than brown sugar.

Add the salt to the tomatoes and onions and let stand overnight. Drain off and add the vinegar and water; bring to a boil and simmer 15 minutes. Drain this off; add the sugar, vinegar, and spices. Cook fifteen minutes. Pour into hot, sterilized jars and seal.
