1 | Peck of green tomatoes | |
4 | Onions; chopped fine | |
1 | c | Salt |
2 | qt | Vinegar |
1 | qt | Water |
2 | lb | Maple or brown sugar |
3 | pt | Vinegar |
1 | tb | White mustard seed |
1 | tb | Black pepper |
1 | tb | Ginger powder |
1 | tb | Cloves; powdered |
1 | tb | Allspice; ground |
Maple sugar is better than brown sugar.
Add the salt to the tomatoes and onions and let stand overnight. Drain off and add the vinegar and water; bring to a boil and simmer 15 minutes. Drain this off; add the sugar, vinegar, and spices. Cook fifteen minutes. Pour into hot, sterilized jars and seal.
