Title: Macadamia-Nut Butter

1/4 | c | Macadamia nuts lightly salted (abt 1 oz) |
6 | tb | Butter, cut in bits slightly softened |
1 | ts | Lime juice |
1 | tb | Plus 1 tsp parsley, minced |
Salt and pepper |
Grind nuts in food processor until very fine. Add butter and process to blend. Scrape down mixture. Add lime juice and process until blended. Transfer mixture to small bowl. Stir in parsley. Season to taste with salt and pepper. Serve with chicken.
Keeps, covered and chilled, up to 2 days.
