Title: Onion Ring Pepper Relish

Yield: 6 Servings

12 Red bell peppers
12 Green bell peppers
5 6 hot peppers (Optional) use
  Only if hot relish is
  Desired
5lbOnions, thinly sliced and
  Seperated
  Boiling wter
5cSugar
6cCider vinegar
4tbNon-iodized salt

Carefully remove seeds from peppers. Grind peppers. Place peppers in small bowl and fill with boiling water. Let stand 10 minutes. Drain well in a colander. Place onion rings in another bowl. Pour boiling water over onions and let stand 10 minutes. Drain well in a colander. Make a syrup of sugar, vinegar, and salt. Add peppers and onions. Cook 10 minutes. Put in hot sterile jars and seal.
