Title: Peach Ketchup - Sl11/95

Yield: 1 -1/4 cups
16 | oz | Can sliced peaches in heavy syrup; undrained |
1/2 | c | Onion; finely chopped |
1/2 | c | White vinegar |
1/4 | ts | Salt |
1/2 | ts | Ground cinnamon |
1/4 | ts | Ground cloves |
1/4 | ts | Ground allspice |
1/4 | ts | Ground red pepper |
Drain peaches, reserving syrup in a small saucepan; set peaches aside.
Cook syrup over medium heat 5 to 7 minutes or until reduced to 1/2 cup, stirring occasionally. Add peaches, onion, and remaining ingredients; bring to a boil. Reduce heat, and simmer. Cook 45 to 50 minutes or until thickened, stirring often; cool.
Position knife blade in food processor bowl; add peach mixture. Process until mixture is smooth, stopping once to scrape down sides. Transfer to a serving bowl; cover and chill at least 8 hours. Serve with poultry or pork. Yield: about 1-1/4 cups.
