Title: Pickle Power Chicken

3 | lb | Chicken pieces |
;salt | ||
1/2 | c | Sweet pickle liquid |
1/4 | c | ;water |
2 | tb | Lite soy sauce |
20 | oz | Can pineapple chunks w/juice |
1 | c | Sweet mixed pickles |
1 | Tomato; cut in wedges |
Place chicken on broiler rack; sprinkle with salt. Broil about 4 inches from source of heat 3 to 4 minutes. Brush chicken with 2 tablespoons pickle liquid and continue broiling until browned. Turn chicken, brush with another 2 tablespoons pickle liquid and broil until browned.
Transfer chicken to large skillet with lid. Combine water and soy sauce; add to chicken with pineapple and liquid, pickles, and 1/2 teaspoon salt. Simmer about 30 minutes or until chicken is tender, turning chicken at least once during cooking. Add remaining pickle liquid and tomato wedges; simmer 2 to 3 minutes or until tomatoes are just tender. Serve immediately.
