Title: Pickled Hilo Mangoes

Yield: 1 Gallon
10 | lb | Young green mangoes |
6 | c | Water |
2 | c | White sugar |
2 | c | Brown sugar |
1 1/2 | c | White vinegar |
1/2 | c | Hawaiian salt |
1 | ts | Red food coloring |
Peel and cut into fourths the green mangoes and pack into sterilized jars. Put all ingredients, except red food coloring in a saucepan and bring to a boil. Add food coloring and pour hot sauce into mango filled jars. Put jars upside down the first day and turn right side up on the second day. Eat the mangoes on the third day. Edward Aki
