Title: Refrigerator Pineapple Preserves

2 | cn | Crushed Pineapple In |
Unsweetened Juice -- (20 Oz | ||
Ea) | ||
1 1/2 | c | Dark Brown Sugar -- Packed |
1 | tb | Lemon Juice |
1 | Cinnamon Stick -- Broken In | |
Half | ||
1/4 | ts | Nutmeg -- Freshly Grated |
In a heavy saucepan, combine all the ingredients. Cook, stirring occasionally, over moderate heat until the liquid is thickened, 30 to 40 mins. Ladle into hot, clean jars and set aside to cool. Cap tightly and refrigerate. Will keep about a month. Makes about 6 half-pints.
