Title: Ripe Tomato Relish

VEGETABLE MIXTURE | ||
1 | ga | Ripe tomatoes; chopped |
1 | ga | Cabbage; chopped |
1 | qt | Onions; chopped |
6 | Hot green chile peppers | |
6 | Sweet red peppers | |
1 | c | Salt |
BRINE MIXTURE | ||
3 | lb | Sugar |
2 | tb | Powdered mustard |
2 | tb | Ginger |
2 | tb | Turmeric |
1/2 | ga | Vinegar |
2 | tb | Celery seed |
2 | tb | Cloves |
2 | tb | Cinnamon |
Mix vegetable ingredients (including salt). Place in a colander and let drip for 3 hours.
Place brine ingredients on the stove and bring to a boil. Add vegetables and boil for 10 minutes. Pack in hot sterilized jars and seal.
