Title: Terry's Salsa Dressing

Yield: 4 Servings
2 | Red onions, finely chopped | |
2 | Green peppers, seeded, diced | |
2 | Green chillies, seeded and finely diced | |
1 | cl | Garlic, finely chopped |
1 | tb | Olive oil |
8 | Plum or salad tomatoes, | |
Skinned, seeded and diced | ||
Juice of 1-2 limes | ||
Salt |
Mix together the diced red onions, green peppers, chillies and garlic. Add the olive oil and juice of 1 lime. Add the tomato flesh and stir in well to slightly break down the tomato flesh. Adjust the seasoning with a good pinch of salt. The salsa should have a good balance of flavours. More lime juice maybe needed to lift the other tastes. The salsa is now ready and can be kept in the fridge for a few days.
Salsa is a Mexican relish that has so many variations. It's really a fresh sweet and sour chutney, come sauce, come dressing. Another ingredients is chillies, so not only is it sweet and sour but hot, too ! This recipe goes well with hot or cold fish, meats, chicken or you can even use it as a relish for a hamburger. The most classic version is Salsa Verde, a green chutney with garlic, parsley, mint, mustard, capers, green chillies, oil and vinegar. There are also red salsas and fruits salsas and more, but this we'll just call Salsa Dressing !
