Title: Watercress Mayonnaise

1/2 | lg | Bunch watercress, leaves only |
1 | | Shallot, coarsely chopped |
2 | tb | Tarragon vinegar |
1/2 | ts | Salt |
| | Pinch of black pepper |
| | Pinch of cayenne pepper |
1 | c | Homemade mayonnaise |
Place all ingredients except mayonnaise in a food processor. Puree,
scraping down sides often. Add mayonnaise and mix until just blended.
