Title: Grapefruit Gelatin

1/2cSugar
2 Envelopes unflavored gelatin
1 1/2cWater
2lg(to 3) grapefruits
1/4cLemon juice
1 (to 2) drops red food coloring (opt)

Combine the sugar and gelatin in a large nonreactive saucepan. Gradually stir in the water.

With a vegetable peeler, remove the rind from 2 of the grapefruit and add it to the saucepan. Squeeze the grapefruit; you need 2 cups of juice. Add the grapefruit juice and the lemon juice to the saucepan.

Over low heat, stirring constantly, cook the mixture in the saucepan until it simmers and clarifies, about 5 min. When the liquid is clear, strain it into a serving bowl, pressing down hard on the solids in the strain to extract as much of the citrus elixir as possible. Stir in the food coloring, which will give the gelatin a gentle pink glow.

If you like, the gelatin can be presented in 4-6 serving dishes. In that case, strain the liquid into a large bowl, color it if desired, then carefully pour it into the smaller dishes.

Chill the gelatin for several hours or overnight.
