Title: Green Tomato Mincemeat

Yield: 1 Lg. batch
6 | lb | Green tomatoes; chopped |
6 | lb | Apples; peeled & cut |
2 | lb | Raisins |
2 | lb | Brown sugar |
1 | c | Lard; ground up |
1 | c | Vinegar |
2 | tb | Salt |
2 | tb | Cinnamon |
2 | ts | Ground cloves |
1 | ts | Nutmeg |
1/4 | c | Jelly or marmalade; any flavor |
Orange peel; lemon peel; or citron (optional) |
Chop green tomatoes coarsely, place in a large bowl, and cover with boiling water. Let stand 10 minutes. Drain well. In a large kettle, add all ingredients and mix well. Cook over low heat for about 3 hours. Stir frequently so mixture does not burn. Place in clean jars and seal and store. Ready to use in your favorite pie crust without further processing.
