Title: Guava W/sweet Lime Dressing

10 | Ripe quavas | |
1 | tb | Fresh lime juice |
1 | tb | Granulated sugar |
1/4 | c | Confectioners' sugar |
1/8 | ts | Vanilla |
ds | Ground cinnamon |
Set a fine sieve over a large bowl. Peel the guavas and cut in half lengthwise. Wish a sharp spoon, scoop our the seedy inner flesh and place it in the sieve.
Cut the resulting guava shells in half lengthwise. Place in a large bowl. Add the lime juice and granulated sugar. Toss to mix.
With the back of a large spoon, press the guava flesh through the sieve until only the small seeds remain. Discard the seeds. Add the confectioners' sugar, vanilla and cinnamon. Stir to mix. Divide the guava shells among dessert plates. Drizzle with puree.
