Title: Happy Endings Plum Cake

1 | c | Butter, unsalted |
3/4 | c | Sugar |
3/4 | c | Brown sugar, packed |
2 | lg | Eggs |
1 | ts | Vanilla |
2 1/2 | c | Flour(add 2 tb high alt) |
2 | ts | Baking powder(subtract 1/2 ts high alt) |
1 | ts | Baking soda |
1/2 | ts | Salt |
2 | ts | Cinnamon |
16 | oz | Purple plums in syrup, well well drained and chopped reserve |
Preheat oven to 400
In a large bowl, beat butter til creamy and light, then gradually add sugars, beating until creamy and smooth. Beat in the eggs, then the vanilla. Sift the flour, baking powder, baking soda, salt and cinnamon together. Stir the dry ingredients into the butter mixture, alternating with 1/2 cup reserved syrup, beginning and ending with dry ingredients. Stir in the plums. Pour the batter into a buttered 9 x 13 pan. Bake for 25-30 minutes or until a toothpick comes out clean after inserting into the middle. Turn cake unto a rack and allow to cool, then dust with icing (confectioners) sugar.
