Title: Hearty Rice Pudding

1 1/4 | c | Water |
1/2 | c | Uncooked brown rice |
1 | cn | (8-oz.) crushed pineapple in juice, undrained |
1 1/2 | c | Skim milk |
1/4 | c | Raisins |
1/4 | c | Firmly packed brown sugar |
1/2 | ts | Ground cinnamon |
3 | tb | Whole wheat flour |
1 | ts | Vanilla extract |
1/4 | c | Slivered almonds; toasted |
Bring water to a boil in medium saucepan. Add rice; cover, reduce heat and simmer 45 minutes.
Drain pineapple, reserving juice; set pineapple juice aside. Add pineapple and milk to rice, stirring well. Place over medium-low heat; cover and cook 15 minutes. Stir in raisins, sugar, and cinnamon.
Combine reserved pineapple juice and flour, stirring until blended. Gradually add flour mixture to a rice mixture; cook over medium heat until thickened and bubbly, stirring frequently. Remove from heat; stir in vanilla. Spoon into individual dessert dishes; top with almonds. Serve warm or chilled. Yield: 8 servings (18% calories from fat).
