A famous cookie from the highlands of Scotland. Its most famous inhabitant has to be the elusive Loch Ness monster. The highlands are also home to the deer, haggis, and the hardy Scot. Bonnie Prince Charles made Inverness his army headquarters.
Cream the sugar and margarine together, then add the semolina and flour. Knead until smooth and roll into sausage shape in the demerara sugar, coating evenly. Cut into slices and lay on a greased and floured baking tray. Bake in a preheated oven (350f/180c) for about 30 minutes. Leave on a wire rack to cool.
