Title: Honey Spice Cake

1 | c | Honey |
1 | c | Sugar |
2 | c | Raisins |
2 1/2 | c | Water |
1 | c | Shortening |
1 1/2 | ts | Cinnamon, ground |
1 1/2 | ts | Cloves, ground |
1 | ts | Salt |
3 | c | Flour, all-purpose |
2 | ts | Soda |
TOPPING | ||
1/3 | c | Butter (or marg.); melted |
1/3 | c | Honey |
1/3 | c | Sugar, brown |
1/2 | c | Pecans, chopped |
1/2 | c | Coconut |
Combine honey, sugar, raisins, water, shortening, spices, and salt in a medium saucepan. Bring to a boil; boil 3 minutes. Cool. Stir in flour and soda, blending well.
Pour batter into a greased 12x8x2" pan. Bake at 350 degrees for 1 hour or until done. Spread topping over cake; broil cake 3 minutes or until coconut is toasted.
Topping: Combine all ingredients in a small saucepan; heat through. Cool 5 minutes. Spread on hot cake. Yield: about 1-1/2 cups
