Title: Hot Chocolate Pudding

80 | g | Self raising flour |
200 | g | Caster sugar |
2 | tb | Cocoa powder |
60 | g | Unsalted butter |
3 | Eggs; separated | |
200 | ml | Milk |
1 | Orange; grated rind & juice |
Combine flour, sugar, cocoa, orange rind and juice, melted butter and egg yolks in a bowl. Beat with an electric beater mixer on medium until well combined. Gradually add the milk. Fold in the egg whites that have been whisked until they form soft peaks. pour mixture into well-greased ovenproof dish. Place the bowl in a roasting pan with water halfway up the side of the dish, and bake at 180~C for one hour. The top should be firm when the pudding is ready. Serve with thickened cream.
