Title: Hot Water Crust Pastry

Yield: 1 Servings
12 | oz | Plain flour 300g |
1/2 | ts | Level salt |
Yolk of standard size egg | ||
4 | tb | Milk |
4 | tb | Water |
1 | oz | Butter 25g |
3 | oz | Lard 75g |
Sift the flour and salt into a bowl and warm slightly by placing it over a bowl of hot water covered with a towel. Make a well in the centre. Beat yolk with 1 tb milk and pour into well. Pour remaining milk and water into a pan. Add butter and milk. Heat slow until fat melts then bring to a brisk boil. Pour into well. Mix with wooden spoon until well blended. Tip onto a floured board and knead quickly until smooth. Place dough into bowl and stand it over hot water, covering it with a towel. Leave it to rest for 1/2 hour. Roll out to 1/2cm/1/4 inch thick. Cut out lids first and always leave it over a bowl of hot water covered with a towel.
