Title: Icecream Sandwiches

1 1/4 | c | Shortening |
1 | c | Sugar |
2/3 | c | Lightly packed brown sugar |
1 | Egg | |
1/4 | c | Honey |
1/4 | c | Milk |
2 1/2 | c | Flour |
1 1/2 | c | Oats |
1 | ts | Baking soda |
1/2 | ts | Salt |
1 1/2 | c | Coconut |
1 | c | Chopped nuts (almonds etc.) |
Icecream or frozen yogurt |
Cream first 6 ingredients in large bowl on medium speed until light and creamy. Combine flour, oats, baking soda, and salt. Add to creamed mixture gradually beating on low until thoroughly blended. Stir in coconut and nuts. Drop dough by heaping spoonfuls onto ungreased baking sheet. Bake at dg350 for 10-13 minutes or until golden. Cool slightly. Then remove to cooling rack and cool completely. TO ASSEMBLE: SPread one cookie with generous amount of icecream and top with another cookie, press down slightly. Wrap individually and freeze.
