Title: Jumbo Apple Dumplings

2 | c | All-Purpose Flour |
2 | ts | Baking Powder |
1 | ts | Salt |
2/3 | c | Shortening |
1/3 | c | (To 1/2) Milk |
6 | md | Cooking Apples -- Peeled And |

1 | c | Sugar |
1 1/4 | ts | Ground Cinnamon |
2 | tb | Butter Or Margarine |
1 1/2 | c | Sugar |
1 1/2 | c | Water |
1/4 | ts | Ground Cinnamon |
1/4 | ts | Ground Nutmeg |
3 | tb | Butter Or Margarine |
Ice Cream Or Cream |
1. In a mixing bowl, combine the flour, baking powder and salt. Using a pastry blender cut in the shortening till it's about the size of small peas. Sprinkle 1 Tbs of the milk over part of the mixture; gently toss with a fork. Push to side of the bowl. Repeat till all is moistened. Divide into 6 equal portions. Form each into a ball. Cover and set aside.
2. On a lightly floured surface, roll out each portion of dough into a 7 1/2 to 8-inch circle, trimming uneven edges. Place an apple in the center of each circle of dough.
3. Combine the 1 cup sugar and 1 1/4 tsp cinnamon. Divide the mixture among the apples, sprinkling it into the center. Top each with some of the 2 Tbs butter.
4. Moisten the edge of pastry with some water. Bring dough up around each apple to resemble a bundle, pressing the edges together at the top to seal. Cut any remaining dough into decorative leaf shapes to place on top of the apples. Arrange in a lightly greased 3-qt rectangular baking dish.
5. For syrup, in a saucepan, combine 1 1/2 cups sugar, 1 1/2 cups water, 1/4 tsp cinnamon and nutmeg. Bring to boiling. remove from heat and stir in 3 Tbs butter. Pour over apples in baking dish.
6. Bake in a 375 F oven for 35 to 40 mins or till done. Serve warm with ice cream or cream. Makes 6 servings.
Nadine Shirley, of the volunteers known as the Apple Pandowdies at the Apple Jubilee in Waverly, MO., passed away a few years ago. But her daughter, Pat Maycock, continues Nadine's tradition of baking these apple dumplings for the celebration.
