Title: Kiwi Ice

12 | Kiwifruit, peeled, cubed | |
2 | c | Orange juice |
1 1/3 | c | Light corn syrup |
GARNISH | ||
Sliced kiwi | ||
Twist of lemon rind |
Using a food processor or blender, combine kiwifruit and orange juice. Cover, and process or blend until mixture is smooth. Pour mixture through sieve to remove the seeds. Place mixture into a shallow non metal container. Stir in the corn syrup. Place container in the freezer. Freeze for about three hours or until almost firm. Place mixture back into food processor of blender and process until fluffy. Return to container and place back in the freezer until mixture is firm.
To serve, let stand at room temperature about 30 minutes and then spoon into serving dishes.
Garnish with sliced kiwi and lemon rind twist if desired.
Makes approximately 10 (1/2 cup) servings
