LOOK FOR: Firm, glossy, bright orange kumquats. Avoid blemished or shriveled fruit.
TO STORE: Refrigerate kumquats and use them within 1 week.
TO PREPARE: Wash the fruit and remove the stems; cut in half to remove the seeds.
TO SERVE: Eat kumquats out of hand, peel and all; add cut up kumquats to fruit salads; or leave them whole for a garnish.
