200 | g | Lemon aspen |
100 | ml | Lemon juice |
500 | g | Sugar, castor |
1 | l | Milk |
12 | Egg yolks | |
1 | l | Cream |
200 | ml | Glucose |
Puree lemon aspen. Boil with lemon juice for 5 minutes. Add sugar and milk and warm through. Pour over the egg yolks, slowly whisking. Cook gently over a water bath until it reaches a light custard consistency. Strain, stir through the glucose and add the cream. Cool and churn in an ice-cream maker.
