Title: Lemon Crackle Cake

20 | Soda cracker (2" square) | |
3/4 | c | Brown sugar |
1 | c | Flour |
1 | ts | Baking soda |
1/2 | c | Butter or oleo |
1 | c | Coconut |
Crush cracker in bowl. Add brown sugar, flour and soda. Work in butter, add coconut. Pat 3/4 of mixture into greased and floured 8-9 inch baking pan. Carefully spread on filling. Cover with rest of crumb mixture. Gake at 350F for 30-35 minutes or until slightly brown. %%%%%%%%%%%%%%%%%%%%%%%%%%% %%%%% LEMON FILLING %%%%% %%%%%%%%%%%%%%%%%%%%%%%%%%% 1 cup sugar 2 tbsp cornstarch 1 cup cold water 2 eggs, beaten juice of 2 lemons, OR 1/2 cup lemon juice 1/4 cup butter 1 tsp vanilla In sauce pan, combine sugar and conrstarch.
