Title: Lemon Refrigerator Cookies

Yield: 7 Dozen
1 | c | Butter; (2 sticks) |
1/2 | c | Granulated sugar |
1/2 | c | Brown sugar; packed |
1 | Egg | |
1 | tb | Lemon peel; shredded |
2 | tb | To 3 tbsp lemon juice |
4 | c | Flour; sifted |
1/4 | ts | Baking soda |
1/2 | c | Nuts; finely chopped |
Note - Measure flour after sifting.
Cream butter and sugars. Add egg, lemon peel, and juice; beat well. Blend flour and soda; add to creamed mixture. Add nuts and mix well. Shape into 2 or 3 rolls, 1.1/2" in diameter. Wrap each roll in waxed paper. Chill in frig until firm. Cut rolls into 1/4" slices. Bake on a cookie sheet in a 375~ oven about 10 mins., until lightly browned.
