Title: Light- Frozen Fresh Peach Yogurt - Sl 6/90

Yield: 12 -1/2 cups
1/4 | c | Sugar |
2 | c | Ripe peaches; mashed (about 4 peaches) |
1 | c | Sugar |
2 | Envelopes unflavored gelatin | |
1 | ds | Salt |
2 | c | Skim milk |
5 | c | Plain low-fat yogurt |
1 | tb | Vanilla extract |
Sprinkle 1/4 cup sugar over peaches; let stand 15 minutes. Combine 1 cup sugar, gelatine, and salt in a saucepan; add milk, and let stand 1 minute. Cook over low heat, stirring constantly, 5 minutes or until gelatin and sugar dissolve; cool. Stir in yogurt, peaches, and vanilla; chill. Pour mixture into freezer can of a 1-gallon hand-turned or electric freezer; freeze according to manufacturer's instructions. Serve immediately, or ripen 1 hour. Yield: 12-1/2 cups. (84 calories per 1/2 cup.)
