Title: Low-Country Banana Pudding

2 | c | Milk |
2 | Eggs plus 2 extra yolks | |
(save the extra whites) | ||
1/2 | c | Sugar |
2 | tb | Flour |
1 | tb | Butter |
1 | ts | Vanilla extract |
1 | Box vanilla wafer cookies | |
6 | Bananas, sliced in rounds | |
2 | Egg whites, beaten stiff | |
2 | tb | Sugar |
Pour milk in pot (best if double boiler used). Beat eggs well (save 2 egg whites). Add sugar and flour; cook until mixture thickens, stirring constantly. Add sugar and flour; cook until mixture thickens, stirring constantly. Add vanilla and butter; remove and stir. In casserole dish, layer vanilla wafers, bananas and custard. Repeat layers 3 times. Cover with meringue composed of beaten egg whites and sugar. Bake at 375F for 15 minutes or until meringue is golden brown.

Carolyn's note: I would cook the custard part in a large bowl suitable for the microwave, in the microwave, stirring frequently, and then assemble and finish off in the oven.
