Title: Madeleines

4 | Eggs | |
3/4 | c | Sugar |
1/2 | ts | Vanilla extract |
1/2 | ts | Orange flower water |
1 1/2 | c | All-purpose flour |
1/2 | c | Unsalted butter; melted,cool |
Superfine sugar |
Preheat oven to 400 F (205 C). Grease 1 or 2 madeleine molds with butter and dust with flour. Put eggs, sugar, vanilla and orange flower water in a medium-size bowl. Place over a pan of gently simmering water; beat until very thick. Remove from heat. Continue beating until cool and the mixture retains its shape for a few seconds after a spoon is drawn through it. Carefully fold in flour; then gently fold in 1/2 cup melted butter. Fill each madeleine mold 3/4 full with mixture. Bake 12 to 15 minutes or until lightly browned and springy to the touch. Remove from pans onto a wire rack, patterned-side-up. Srinkle with superfine sugar immediately. Continue to bake Madeleines, in batches, until all mixture is used.
