Title: Maine Blueberry Cake

1 1/2 | c | Whipping cream |
2 | ts | Vanilla |
3 | Eggs | |
1 1/2 | c | All-purpose flour |
1 1/2 | c | Sugar |
1 | c | Ground pecans |
2 | ts | Baking powder |
1 | c | Fresh blueberries |
Lemon filling: | ||
1 | c | Butter |
2 | c | Powdered sugar |
4 | tb | Lemon juice |
1 1/2 | ts | Vanilla |

Cake: Preheat oven to 350. Whip cream and vanilla until stiff. In a separate bowl, beat eggs until thick and lemon-colored. Fold eggs into whipped cream. Mix flour, sugar, pecans, baking powder and salt. Fold flour mixture into cream mixture. Fold in blueberries. Pour batter into three 9 inch pans sprayed with cooking spray and dusted with flour. Bake for 30 minutes. Cool in pans for 10 minutes and remove from pan and cool completely. Lemon filling: beat butter, sugar, lemon and vanilla together. Place one cake layer upside down. Spread evenly with 1/'2 filling. Top second layer with remaining filling. Sprinkle third layer with powdered sugar and refrigerate and serve. If you put a stencil down first you can create a wonderful powdered sugar design.
