1/4 | lb | Cake, stale -OR- |
1/4 | lb | Breadcrumbs -OR- |
1 | pt | Milk |
2 | Eggs | |
1 | Lemon, rind of... grated. | |
2 | tb | Sugar |
2 | tb | Jam |
Essence, lemon -OR- | ||
Essence, vanilla -OR- | ||
2 | tb | Sugar, castor |
Rub bread or cake through a wire sieve. Put milk on to boil. When boiling, pour it over the crumbs. Add lemon rind. Separate the whites from the yolks of the eggs, beat the yolks and sugar well then add to the milk and crumbs.
Flavour to taste and pour into a buttered pie dish. Stand the pie dish in a baking dish containing a little cold water. Put in moderate oven until set. Take out and spread with jam.
Whip the whites of the eggs to a stiff froth. Stir in lightly 2 tablespoons castor sugar and spread over the pudding and put back in the oven until set and a pale fawn colour.
