Place breadcrumbs in basin with butter and sugar to taste and pour over hot milk and let stand. Beat up 1 whole egg and the yolks of 2 eggs and add them to the milk when it is cool. Put in a piedish and bake in a slow oven until it sets. Spread the top with jam.
Beat the whites of 2 eggs stiffly, add 2 tablespoons of sugar, mix well, and pile on top of the pudding. Place in an oven till a golden colour.
