1 | c | Butter or margarine, soften |
1 1/2 | c | Sugar |
1 | | Egg |
1/4 | c | Water |
1 | ts | Vanilla extract |
1 1/2 | c | All-purpose flour |
1/2 | ts | Baking soda |
1/2 | ts | Salt |
1/2 | ts | Ground cinnamon |
1/2 | ts | Ground nutmeg |
3 | c | Quick-cooking oats, uncooked |
1 | c | Chopped pecans (optional) |
1 | c | Raisins |
Cream butter; gradually add sugar, beating at medium speed of an electric
mixer until light and fluffy. Add egg, and beat well; add water and
vanilla, mixing well. Combine flour, soda, salt, cinnamon, and nutmeg; add
to creamed mixture, mixing well. Stir in oats, pecans, if desired, and
raisins. Drop dough by rounded teaspoonfuls onto ungreased cookie sheets.
Bake at 350 degrees for 10 to 12 minutes or until lightly browned. Cool
slightly on cookie sheets; remove to wire racks to cool completely. Yield:
about 8 dozen.
