Title: Raisin Puff Cookies

Yield: 14 Dozen
3 3/4 | c | Raisins |
2 1/2 | c | Water |
2 1/2 | c | Vegetable shortening |
3 3/4 | c | Sugar |
5 | Eggs | |
2 1/2 | ts | Vanilla |
1 | ts | Nutmeg |
2 1/2 | ts | Soda |
1 1/4 | ts | Salt |
8 3/4 | c | Flour |
1 | ts | Cinnamon |
White sugar; for rolling cookies in | ||
1 1/2 | c | Nuts; chopped (optional) |
Boil raisins and water until water is absorbed. Cool. Mix w/remaining ingredients. Roll into balls; dip in white sugar. Bake at 375~ to 400~ about 10 mins. If desired, 1.1/2 cups nuts may be added. Cookies may be frozen.
