Title: Rhubarb Cream

2 | c | Rhubarb, diced. |
Lemon juice | ||
1/2 | c | Sugar |
3 | c | Rice, cooked. |
1/2 | c | Cream |
Essence, vanilla |
Gently stew the rhubarb with the sugar in a little water. Add a squeeze of lemon juice and stir gently into the cooked rice. Chill.
Whip the cream with a little sugar and a few drops of vanilla essence and fold into the rice mixture. Chill thoroughly before serving.
